Make Your Own Nervosa Mafalde ai Funghi

Makes 2 portions at-home of our famous Mafalde pasta *orders will be ready for pick-up in 24 hours*:


  • Mafalde
  • Funghi Sauce
  • Parmigiano
  • Parsley

1. Bring a large pot of water to a boil
2. Meanwhile heat up the sauce at medium heat stirring occasionally
3. When the water boils, add salt and then drop the pasta
4. Cook aprox. 3 min at rolling boiling
5. Set 3/4 cup of cooking water aside, then drain the pasta
6. Pour 1/2 cup of cooking water on the sauce, stir than add the pasta and half of the parmigiano and parsley
7. Toss over medium heat until the sauce is reduced and incorporated (2 min max for a cooking al dente). If you prefer the pasta more cooked just add the remaining water and reduce the sauce furtherly
8. Plate and sprinkle the remaining parmigiano on top
